Emma makes herself comfortable in very odd ways. It all started when she was a puppy and since then, she has only gotten more creative with her lounging. She takes it all very seriously, you see, and claims that only professional loungers know how to get comfy no matter what.
This weekend, she started out on the top of one of the couch cushions, but over time, gravity won out and she slid down. Being the professional she is, though, she learned to go with the flow.
Keeping her rear elevated seems to be a common theme with her lounging, although she's also been known to keep things parallel.
See that sleepy stare of annoyance I'm getting for sticking the camera in her face? I slowly backed away because I dare not invoke the wrath of disturbing her precious sleep. She'll have you know that she works very hard!
Changing subjects abruptly- vegan food is delicious. Mike made one of our old stand-by meals last night, Black Bean & Sweet Potato Enchiladas from the Vegan Planet cookbook. We love that the recipe makes so much and uses simple, cheap ingredients. Last time we had them he put some ghost pepper salsa on them, but this time he went with mango habanero salsa. Still spicy with a bit more sweetness. Either way, they're delicious!
Today Mike had to work 12 hours, so I took over in the kitchen & made a recipe we haven't had before- Indonesian Tempeh Salad from the Vegan Fire & Spice cookbook. It was a bit similar to the Thai Tempeh Salad that we make, but different enough to make us want to have it again. The only thing I changed was using sugar snap peas instead of snow peas since that's all the co-op had. Besides that, it had poached tempeh that was marinated in a delightful peanut sauce (really, all peanut sauce is delightful, IMO), bean sprouts, carrots, green onions and chopped peanuts. Spooned onto some romaine lettuce made it into a very satisfying dinner.
Tomorrow my new treadmill is being delivered! I've been missing having one and am really looking forward to getting a lot of use out of my new toy. Next on the wish list- an iPhone, perhaps? Is is wrong that I only want it for it's camera so that I can more easily (and discreetly!) take pictures of food in restaurants?
Coming up tomorrow- I'll most likely be posting my last dog treat recipe for a while. It'll be #80, which is all I have so far! I have more ideas floating around in my head, though, so it's only a matter of time before I add to my collection..........
What a cutie! Emma is so precious, I love the sleepy pics. The enchiladas look and sound delicious. And the thai salad! I'm totally with you, I love peanut sauce! That is so exciting about the treadmill! I love the feeling of getting a new toy :) And I assure you, you may only want an iPhone for the camera now, but when you get it you'll see how amazing and useful it is! I love my iphone, I'm so glad I got it!

ReplyDeleteI agree, vegan food is delicious...don't know how folks can live without it! I'm so glad we went vegan; it's truly one of the best choices I've ever made in my life.
Those enchiladas look the business, as does the Indonesian salad...super yum!

I can't believe she didn't flinch when you took her picture. Once I try to take a picture of my dogs, they immediately move.

(She matches your sofa and pillow so well, she probably thinks that by squishing herself between the sofa arm and cushion, she's totally invisible. No wonder taking that closeup of her made her look annoyed - you blew her cover!)

I saved that enchilada recipe web site you linked to - those sound yummy. Think I'll try an oil-free, vegan cheese-free version. We love enchiladas! You guys are really being ambitious in the kitchen lately ~ I still haven't felt settled in enough to feel up to trying any new recipes yet! Wonder what's taking me so bloody long...
Whaaaa? Your last dog treat recipe? Okay, now I need time to absorb this! :-)

Laurie- The two dogs in that article are so cute! Rowan has tried laying on Emma a few times, but Emma usually doesn't tolerate it. Mike cute the oil out in the enchiladas and they turned out no different than with it. I hope you like them!
