Recent Eats, 4 Ingredient Salsa & A Haircut

We had a few really good meals this week. One was the Cheater Pad Thai from the Happy Herbivore cookbook.  We did the veggie version of it and it really hit the spot.  Anything with peanut sauce is definitely my friend. 
Last night, we had the Dragon Bowl that Maud over at Food Feud posted about.  I'm pretty picky when it comes to certain things, like sauces, so I ended up putting peanut sauce on mine.  Mike adored the Dragon sauce and happily used my portion of it.  I had leftovers for lunch at work today and a co-worker was very interested in the delicious looking meal I was having.   
Tonight we made the easiest salsa in the world (the recipe is from a co-worker, who found it in a magazine).  All you need to do is drain & rinse a can of black beans & a can of corn.  Mix them in a bowl with a can of diced tomatoes with green chilis in them (several brands make them) and some chopped scallions.  Cheap, fast, healthy and delicious! 
I got quite a few inches cut off of my hair today (about 4 or 5 inches).  A little over a year ago, I had colored my hair, which destroyed it enough.  Add my thyroid issues to that and my ends were dry and brittle as a result.  I had all of that chopped off today for a new start.  Losing pounds, cutting off crappy hair, getting my health back and kicking some arse.  This is the new, improved Molly.  I really do need to get a picture of me smiling eventually, though......

  2. Your hair looks great! I'm a compulsive hair cutter so mine never really gets long enough to make a big difference, but this looks really good! I hope you're happy with it.
    The salad also looks awesome! I should make it again.

    It sounds like you're working your way through a single cookbook -- as I am. You're blogging about it though lol. I always forget to take pictures before I dig in lol.

    You're doing so great with your new attitude on life. It's amazing how much better you can feel with a good haircut. It looks cute! My doctor told me this week that I need to lose weight, and your food pics are giving me motivation to try some new, healthy recipes.

    foodfeud- I never thought I'd like my hair this length. It's always been short or long with me, but I think I might keep it this way.... at least for a while. :)

    Ximena- Thank you! We've made about 25 recipes out of HH now. What cookbook are you going through?

    Rose- isn't the bowl pretty? I love all of the colors in it. I get told that I look a lot like someone that others know a lot. Must have some common features.

    Sage- I'm honored to have motivated you! I would have never guessed that you need to lose weight, though. The pictures you post of you look fantastic!
