Recent Eats

Here are some of the things we've had lately.  As usual, we replaced any oil with veggie broth or just eliminated it.

Disco Stew from 500 Vegan Recipes.  The sauce was an interesting combo of ingredients which included peanut butter, lager, tomato paste, mustard, coconut milk and several other things.  I love how it turned out.  The rest of it was pretty simple, with potatoes, onion, carrots & peas.  
Black Bean Sloppy Joes, a McDougall recipe.  We add lots of hot sauce to ours and top them with avocado.  It also makes a great chip dip!
Tuscan White Bean Soup from Vegan Fire & Spice.  This was so good! 
After hearing raves about it on several blogs, I finally broke down and made the Marbled Banana Bread from The PPK.  We had three old bananas to use up, so it was perfect timing for it.  The only changes I made was that I used mostly chickpea flour and replaced the oil with applesauce.  It turned out great! 
Tonight we had Lentil Orzo Casserole from Dining With Friends.  We've had it several times before and although it's made from very simple ingredients, together it makes a delicious meal.  Orzo, lentils, onions, carrots, fire roasted tomatoes, complete with a bread crumb topping.  I can't wait to have leftovers for lunch tomorrow!
Has anyone had any of the Man's Best Friend hot sauces?  We love this one so far and can't wait to try more.  The Doberman is a heat level of 8, which has quite the nice zing to it.  They make some hotter ones, including a 10++ level one that's made from ghost peppers (one of their "mutt" varieties).  I want that one!   
They all have some interesting ingredients in them.  The Doberman has strawberries while others have things like kiwi, peaches, ginger, plantain, raspberries, blackberries, pineapple, mango and rum.  Very interesting!
In somewhat related news, our copy of Everyday Happy Herbivore arrived today and we're already drooling over the recipes!  Has anyone made anything from it yet?

  2. Everything here looks so good and it's making me hungry! I've really been meaning to try a bean based sloppy joe, but haven't gotten around to it. Those look good!

  4. Yum, everything looks great! I've seen that marbled banana bread so much, it looks SO GOOD! The soups sounds delicious as well. I love a nice hearty soup and yours looks really yummy. ANd I love the name of the Disco Stew :)

    Those hot sauces sound cool, I'm going to keep a look out for them around here.

  6. that all looks so good. especially the soup to me. too bad that recipe isn't in a cookbook. the marbled bread looks great too. well anything from the PPK usually is!

    I'm so glad you tried PPK's banana bread and liked it. Very good idea about using applesauce. I need to start doing that.
    The Lentil Orzo looks supper yummy. That looks like something that I would totally love! I need to check out Dining with Friends.
    Wow, you guys like the hot stuff. :o) That would kill me!
    I just ordered my HH cookbook Monday, so I haven't gotten it yet. I'm very excited about getting it though. It's good to know that it has drool worthy recipes in it. :)
