Chili Sweet Mango Noodles & Some Cuteness

We tried another new recipe from the Everyday Happy Herbivore cookbook tonight and we both loved it.  Chili Sweet Mango Noodles may sound all fancy pants, but like all of the recipes in that book it's designed to be whipped up in a short time with no added oils.  It also has one of my favorite combos when it comes to food- sweet & spicy.  Definitely something we'll be making again soon!
Now onto the cuteness.  Sophie doesn't get the fireplace bed to herself very often, so when she does, she sprawls out and enjoys herself to the fullest.
Emma was pretty tired after taking two long walks on Sunday.  I love when they get all content and sleepy.
Only a few days left until I announce the winner of the Crypton Throver.  If you haven't entered yet, please do!
I hope that everyone is having a great week so far!

  3. Stacy- A few other bloggers have told me that they have kitties who look like Sophie. Must be a vegan blogger kitty type! :)

  12. Love the pictures. Both Sophie and Emma looks so happy. I haven't had cats in years, but I remember how they love to stretch out.

Years ago, when I moved to NYC for a year, I had a co-worker living in my house in Des Moines, IA to take care of my 3 cats. He kept the house at 50º, I swear. When I came home every other weekend (and he left to stay with his girlfriend)I'd crank the heat up to 70º. My Siamese cat, Jessica, would stretch out right next to the heat vents and just take in the heat. :)

  13. SV- thank you!

bitt- It's definitley napping & cuddling weather here lately! It's getting dark out at 4:15 now. yikes!

Lori- brrr, that's pretty cold! It's the temperature they keep my workplace, and we only have space heaters, so I can just imagine how good it felt for Jessica to be by the vents!
