We've tried a few new recipes this week. The first was Spicy Portuguese Kale soup from Vegan Fire & Spice. It was really good, but I think the directions might have been off a bit. Next time, we'll be cutting the cooking time in half because the potatoes were somewhat mushy. We'll also be adding veggie broth to it to make it soupier because it turned out more like a very heart stew. It reminded me of garlic mashed potatoes, only with some carrots, kale & kidney beans and spice added.
We made our first recipe from our new cookbook, Everyday Happy Herbivore, which was Cheater G-Nut Stew. This will be made again very soon! It was everything we like- an easy, quick meal made with healthy, whole foods. It basically consisted of garbanzo beans, spinach, tomato sauce and a little peanut butter. So simple but so, so delicious! The only thing we'll be doing different next time is to double the batch.
Tonight we had another recipe from the Everyday Happy Herbivore book, Pineapple Tempeh Teriyaki Stir Fry. The picture does the meal absolutely no justice. It's marinated tempeh that's stir fried with bell peppers & onions, served over rice and topped with crushed pineapple. The marinade has pineapple juice in it, giving the dish a nice sweetness. It's another keeper!
The girls like to jump on & off of our bed a lot, which made us worry that one of them would eventually slip on the floor and get hurt. To make things safer, we decided to get a rug, but wanted an eco-friendly one that wouldn't emit all kinds of chemicals. The solution was this rug made from seagrass! Emma & Rowan both seem to approve of it.
Spooky Vegan posted this the other day and I fell in love with it.

ReplyDeleteIs the peanut butter in the soup a strong flavour? Would it be really bad if I left it out or subbed in tahini? Just trying to keep the high fat stuff out of the house lol I can see me eating too much if I buy peanut butter for the recipe.
I like the rug, it's nice and neutral but warm.
Oh and the vid of Sophie playing with her tail is just darling :)
All the food you posted looks really good to me, especially the g-nut stew. I've got to pay more attention to my cookbooks!
ReplyDeleteI put a jute rug in my study and I like it a lot. I like the way it looks, and the way feels when I walk on it barefoot.
Claire- the peanut butter isn't too strong. I'd definitely try tahini, or even leave it out. It's basically like a tomato soup. I'm glad you like the video of Sophie! She does that every morning and it's such a great way to start the day, watching her. :)
ReplyDeleteAndrea- I almost went with a jute rug, but the seagrass was a bit cheaper. I love jute! The seagrass is very similar to it, though, and like you I love how it feels on my feet. :)
Holy, holy moly. Everything looks great, but ESPECIALLY that groundnut stew. I've been resisting another cookbook but I may have to cave.

ReplyDeleteI'll have to try that Portuguese kale soup, once the organic kale is back down to less than $5 a bunch! Yikes. I think I'll follow your lead and use more broth. What kind of spuds did you use? And we'd probably prefer it with navy or white kidney beans instead of the red ones.
I love your seagrass mat! (We had a jute mat in our sunroom at the old house, but I sold it when we moved. It always left a mess underneath it, and I was afraid it would scratch the hard wood floors here). Really love that seagrass mat, it looks great in your bedroom and I'm not surprised it got a paws up from the girls!
Laurie- $5 a bunch!? Yikes indeed! We just used regular old Russet spuds, but I think red potatoes would be especially good.
